Valentine’s Day is in one week! Eek I’m so excited! It’s funny, I used to really dislike Valentine’s Day. I always thought it was a bit cheesy to be honest, but not anymore! I don’t know what changed (perhaps I’m a bit cheesy now… lol) but these days I get really into it. We still don’t usually go out, but we often cook a nice meal at home and do a few other fun things leading up to it with Emmylou – like baking heart shaped cookies!

We also just got dinosaur shaped cookie cutters, so it was really tempting to make dinosaur cookies instead…. but it’s Valentine’s Day so we kept with the theme :). This is actually the first time we’ve decorated cookies together. We were out of town this Christmas so we didn’t really do much baking, and before that Emmylou was a bit young. Needless to say I was very excited about this occasion. I ordered these heart sprinkles from Amazon, as well as these cookie cutters. How did it go decorating cookies with a sprinkle obsessed two year old? Well let’s just say I only included photos of the ‘pretty’ ones… haha. But they tasted delicious and that’s all that really matters in the end, isn’t it?

I definitely think part of my new found love for Valentine’s Day has to do with Emmylou. Kids get so excited about holidays that is contagious. I’ve got a little heart sweater picked out for her to wear to daycare on the actual day, and these heart shaped cookie cutters might come in handy for pancakes this weekend as well… As for Zach and I, he always gets me a gift and I usually plan the food (it is my specialty after all) so I’m currently perusing extravagant recipes, and trying to narrow things down and plan my shopping list before this weekend. I’d love to just have a relaxing night with delicious food and good conversation after Emmylou goes to bed. Maybe get a little crazy and stay up until 10:30… Happy (almost) Valentine’s Day everyone! A sweet treat for your special someone this Valentine's day!

Servings 2 dozen
Prep Time 30 minutes
Cook Time 7 minutes

Ingredients

Instructions

  1. Mix together butter and sugar until smooth, then add in eggs and vanilla, mixing until combined. Stir in flour, baking powder, and salt. Cover, and chill dough for at least two hours, or overnight.
  2. Preheat oven to 400 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into hearts using heart shaped cookie cutters. Place cookies 1 inch apart on un-greased cookie sheets. Bake for 7-8 minutes and set aside to cool.
  3. Melt chocolate. Once cookies are cooled, dip into chocolate mixture and add heart sprinkles. Allow to cool in fridge for at least one hour.
