It really feels like spring is in the air! This might be wishful thinking on my part… It is still February in Canada after all. But we had such a gorgeous weekend, the snow is melting, and the days are getting longer. This time of year I always feel motivated to change things up, whether it be doing some de-cluttering, starting to pick up a few items for my spring/summer wardrobe, and eating a bit healthier after a loonnngggg winter of indulging :).

Lemon has always been one of my favorite flavors, and one that I gravitate to in the warmer months (because you can’t just eat chocolate ALL the time, as much as I would like to). I make lemon meringue pie once every spring, and I can never pass up a lemon tarte or square when I come across one, but I wanted to try something a little healthier this weekend. It was a long weekend where I am so I had a lot of time for trying out some new recipes, in between wiping mud off of my dogs paws (one of the few drawbacks to spring).

We are also getting the inside of our house painted the next two weekends and we’ll be staying at a hotel, so I wanted to get a few recipes ready to go as I won’t have access to a kitchen. I knew I had to share this recipe first because let me tell you, the final product lasted less than a day, it was that tasty. I think Emmylou would have just eaten all of them in one sitting if I hadn’t cut her off after two, although they are very healthy so I probably could have given her a third :).

These lemon bliss balls are light on ingredients but heavy on lemony deliciousness. And I think that lemon and coconut is a match made in heaven… I could eat it all day. Dates provide natural sweetness, and cashews add a dose of healthy fats and nutrients like copper and magnesium. Side note, we eat SO MANY cashews at my house. We make cashew milk on the regular, and also use it for sauces and dips to add a creamy texture. Seriously, someone from the cashew industry should give me some money because I pretty much live on the things… lol.

Another great thing about this recipe is the easy cleanup. Except if you’re like me and have a habit of cutting yourself while cleaning the food processor blade… in which case it becomes a bit more cumbersome. Lemon Coconut Bliss Balls

Quick and easy - these lemon bliss balls are a healthy treat that are vegan, refined sugar free, and raw.

Servings 12 balls
Prep Time 10 minutes

Ingredients

Instructions

  1. Soak dates in warm water for about 30 minutes, or until soft.
  2. Add the cashews to a food processor and pulse a few times until chopped.
  3. Add the rest of ingredients and process until well combined.
  4. With slightly damp hands (keeps it from sticking), roll the mixture into balls, then roll each ball in shredded coconut.
  5. Store in an airtight container in refrigerator for up to 1 week, or freezer for up to 3 months.
