I’m sure that I’ve said this before, but next to chocolate, my favourite dessert would be anything lemon flavoured. I love lemon tarts, and lemon meringue pie (when I can get them to set!), and I’ve shared a recipe for Lemon Coconut Bliss Balls on the blog before, which are the perfect healthy treat if you’re in the mood for something lemony. Wanting to expand my lemon dessert repertoire, I recently decided I should probably make something with lemon buttercream frosting (no explanation needed because YUM) and so, this recipe was born.

I made these cookies a few weeks ago, but was just thinking that they would be perfect for Mother’s Day festivities, or for a Mother’s Day gift. We usually do something brunch related for Mother’s Day (this year we actually have two brunches to go to on the same day…), and I think a light, shortbread cookie would be the perfect end to a mid-morning meal.  Other suggestions for something sweet at brunch that come to mind are a French Yogurt Cake (this is one of my favorites and so simple), Raspberry-Ricotta Cake, Buttermilk and Berry Scones, or these adorable Madeleines.

These sweet and tart lemon cookies are light, refreshing and perfect for a spring or summer dessert.

Instructions

Lemon Shortbread Cookies
  1. In large bowl, mix butter, cornstarch, and sugar with electric mixer, about 3 minutes. Add flour and mix until just combined. Add lemon juice and zest. Beat until a soft dough is formed.
  2. Divide the dough in half and form each half into a log. Wrap each log in plastic wrap and refrigerate until firm, at least 30 minutes.
  3. As dough is chilling, preheat the oven to 350ºF. When set, remove dough from fridge and slice into ¼-inch slices. Place onto a baking sheet lined with parchment paper. Bake 10-12 minutes. Cookies will not brown, and will still be a bit soft when done. They will firm up while cooling. Allow to cool completely before frosting.
Lemon Buttercream Frosting
  1. Beat butter for a few minutes with electric mixer. Turn mixer on slowest speed and slowly add powdered sugar. Increase mixer speed to medium and add vanilla extract, salt, and lemon juice and zest. If frosting needs a more stiff consistency, add remaining 1/2 cup of sugar.
